
This is a way healthier version of your normal French toast. It is so so so tasty too. I love the peach and honey combo. The vanilla gives the French toast an extra kick as well. If you want the full fat version, go ahead and use white bread, milk, and powdered sugar, etc. I'm sure it'll be awesome as well. :)
Ingredients:
- 2 slices of 100% Whole Wheat Lite bread
- 1/4 tsp of vanilla extract
- a splash of soy milk
- 1 egg white
- 1 tbsp honey
- a few slices of peach (fresh or frozen)
Directions
1. Mix egg white, vanilla extract, and a splash of soy milk in a bowl. Whisk together lightly.
2. Soak the bread in the mixture. Make sure the entire bread is soaked.
3. Heat up the pan on medium high. Spray with cooking spray. Put the bread in the pan and wait till each side is golden brown.
4. Put on a plate and set a few slices of peach on the toast in a decorative manner. Drizzle with honey.
5. Indulge.

Want some meat, but not the fat and calories? Try this! This is a super yummy turkey patty with water chestnut. The water chestnut gives each bite a little crunch and keeps the patties moist. The cilantro compliments this dish very well. Give it a try, cause it's super fast, easy, and deeeelicious!
Ingredients
- 3 turkey sausages (any flavor, I used Jennie-O's Original Bratwurst)
- 1/3 small can of whole or sliced water chestnut in water.
- 3 cloves garlic ( I just used the preminced ones in a jar)
- a handful of cilantro
- 1 tsp cumin
- a good sprinkle of black pepper
Directions
1. Take the casing off of the sausages by slitting it with a knife and peeling it off. Put meat in a big mixing bowl.
2. Mince the garlic and water chestnuts. Add it in the bowl of meat. Make sure you don't add too much water chestnut cause the patties might not hold together well).
3. Add the rest of the ingredients to the meat mixture. Incorporate all ingredients with your hands. Yes, your hands!
4. Take the meat mixture out of the bowl and onto a cutting board. Shape the meat into a pizza shape and divide into 4 equal portions. Shape each portion into a small patty.
5. On a medium to med-high heat, place two patties into a nonstick pan. (no oil needed unless you don't have a nonstick). Cook till each side is golden brown.
6. Set on a bed of baby romaine lettuce and your favorite dressing. Try not to use the creamy kind of dressing. (I used an Asian sesame flavored one.) Also, set some baby carrots on the side if you like.

For all the lazy bums out there that want to create a cute lil' desert for their sweetie on Valentine's Day or just for the heck of it, here is a no-cook, super quick, low calorie, delicious, recipe. Oh yea, you can be single and enjoy this just as much! (I know I did... haha)
Ingredients:
- 1 box of Instant Chocolate pudding (Fat free & Sugar free)
- 2 cups soy milk (lite and organic preferred)
- A handful of strawberries
Directions:
1. Make the pudding according to the box.
2. Put half a cup of pudding in a cute cup and set a strawberry in the "bath".
3. On a separate little plate, set more strawberries.
4. Enjoy!

So I had this major craving for the banana crepes they have in Japan. I, being too lazy to go buy crepes or make them myself, just used the whole wheat tortillas I had in the cabinet. This was so good! To top it off, it's super healthy. Going to run around 200 calories per crepe. (My tortillas are 80 calories per piece) You can eat this for breakfast or desert. I eat it anytime of the day actually.
Ingredients
1 whole wheat tortilla
1 banana (try to eat organic!)
1 tsp honey (again, organic!)
* a sprinkle of ground cinnamon
* a sprinkle of unsweetened dark cocoa powder (I used Hershey's)
* optional ingredients
Directions (10 mins)
1. Heat a large pan on medium heat.
2. Put the tortilla in the heated pan. Heat each side for about 1 min.
3. After the second side had been heated, turn the heat to very low.
4. While the tortilla is still in the pan, slice the banana onto the tortilla. Try to concentrate it on one side of the tortilla. Allow the banana to get a little bit warm.
5. Remove the tortilla with banana onto a plate with both hands.
6. Drizzle honey on the banana slices. Sprinkle some cinnamon and/cocoa powder if you like.
7. Now you're ready to fold the "crepe". It is only three folds. Fold one side, then up, then the other side. It should look somewhat like a triangle or flat cone. Keep for finger there, until the tortilla cools a little bit and it's holding its place.
